Souvenir

The “Souvenir” wines are classified as AOC Vin de France and embody the meeting of a Languedoc terroir (Haute Vallée de l’Aude) with Burgundian expertise. This unique approach—vinifying emblematic grape varieties (Chardonnay and Pinot Noir) grown in the cool, high-altitude terroirs of southern France, then aging the wines in Burgundy—creates a distinctive signature: the combination of southern ripeness with the finesse inherited from Burgundy’s long winemaking tradition. The result: accessible, expressive wines, perfectly suited to a variety of cuisines as well as casual enjoyment.

History

Founded in 2015 by the Paquet and Montagnac families, Paquet Montagnac Bourgogne is based in the heart of Burgundy, in Davayé. As sons and grandsons of winemakers, the two founders have always been immersed in the world of wine: Camille specialized in vineyard and cellar work, while Mathieu developed a passion for trade and export.

The “Souvenir” cuvées, sourced from the Haute Vallée de l’Aude, further enrich this selection, benefiting from the house’s expertise, with aging and bottling carried out in its Burgundy cellar.

The Vineyard

The grapes for the “Souvenir” wines come from parcels located in the Haute Vallée de l’Aude, a terroir characterized by clay-limestone and stony soils, enriched with marine sediments and schist debris. The vines are planted at a density of 5,000 vines per hectare, promoting healthy root competition and ensuring consistent ripeness. Averaging 20 to 30 years old for Chardonnay (*Souvenir Blanc*) and 20 to 35 years old for Pinot Noir (*Souvenir Rouge*), they cover 8 hectares and 15 hectares, respectively.

Winemaking & Aging

For Souvenir White, made from 100% Chardonnay, the grapes are mechanically harvested and then slowly pressed to preserve the finesse of the aromas. Fermentation takes place in temperature-controlled stainless steel tanks at low temperatures, enhancing freshness and aromatic expression. Six months of aging on fine lees in stainless steel tanks adds roundness and complexity while maintaining vibrant liveliness.

Souvenir Red, made from 100% Pinot Noir, undergoes complete destemming to extract the essence of the fruit. After slow pressing, fermentation occurs in temperature-controlled stainless steel tanks, followed by a maceration period of approximately fifteen days to achieve an elegant structure. Six months of aging in stainless steel tanks preserves the purity of the grape variety while allowing soft tannins and intense fruity notes to shine through.

Wine Character

Souvenir White: Its pale hue with golden reflections reveals a fresh nose, dominated by citrus notes, white flowers, and a subtle mineral touch inherited from the clay-limestone soils. On the palate, the attack is lively and fruity, supported by a beautiful natural acidity. Aging on fine lees adds volume and a silky texture, making it an ideal pairing for grilled fish, seafood, or fresh cheeses.

Souvenir Red: Displaying a beautiful ruby color, this Pinot Noir reveals aromas of red fruits (cherry, raspberry) with delicate floral nuances. On the palate, the balance is marked by the grape’s characteristic freshness, fine tannins, and vibrant fruit. The short maceration and stainless steel aging help preserve the purity of the fruit and the elegance typical of Pinot Noir. It pairs perfectly with poultry, white meats, or lightly spiced dishes.
