Domaine Cédrick Bardin
The uniqueness of the estate lies in its pursuit of responsible and sustainable viticulture while preserving the authentic character of Sancerrois and Pouilly-Fumé wines. The combination of modern techniques, a family heritage, and deep respect for the terroir makes each cuvée from Cédrick Bardin a refined expression of the Loire.
History
The history of the estate dates back several generations, in the heart of the village of Pouilly-sur-Loire. Today, it spans around ten hectares across both banks of the Loire, offering a diversity of terroirs that defines the richness and identity of its wines. The estate’s human scale allows the team to oversee every stage, from vine cultivation to marketing, while embracing modern techniques and the expertise passed down by parents and grandparents. For the past fifteen years, particular attention has been given to environmental and terroir preservation, relying on Terra Vitis practices and Haute Valeur Environnementale (HVE) certification.
The Vineyard
The vineyard, located primarily around Pouilly-sur-Loire, consists of 12 hectares dedicated to Pouilly-Fumé and 3 hectares devoted to Sancerre Blanc. These parcels benefit from a rich variety of soils: Kimmeridgian marl, Villiers limestone, clayey sands, and flint for Pouilly-Fumé, while Sancerre is planted on flint-rich terrain. The vines, averaging 45 years old for Pouilly-Fumé and 25 years old for Sancerre, are carefully cultivated and closely monitored for ripeness. This approach, combined with a commitment to preserving biodiversity, ensures the production of high-quality grapes.
Winemaking & Aging
Vinification and aging are designed to reveal the full finesse of Sauvignon Blanc. After cold settling, fermentation takes place in temperature-controlled stainless steel tanks for 10 to 15 days at approximately 15°C. Bâtonnage is carried out one month after fermentation ends, enhancing aromatic complexity and roundness on the palate. The wines are then traditionally aged on fine lees, still in stainless steel tanks, to preserve their purity and freshness.
Wine Character
The estate’s Pouilly-Fumé perfectly illustrates the balance between fruitiness and liveliness. Sourced from a blend of four terroirs, it reveals fresh and delicate aromas, with a supple palate and impressive length. It pairs effortlessly with an entire meal, from an aperitif to fish in sauce, white meat, or cheese.
As for the Sancerre Blanc, produced in the communes of Saint-Satur and Ménétréol-sous-Sancerre, it expresses notes of white flowers, with a crisp attack and lasting elegance on the palate. It pairs particularly well with oysters, a seafood platter, grilled fish, or goat cheese, while also being a delightful choice for an aperitif.
