Winemaking & Aging

Le Petit Bouchon White
Le Petit Bouchon White is a cuvée that combines innovation and tradition, enhancing the expression of Merlot and Sémillon. Every step of its creation is carefully orchestrated to preserve the purity and freshness of its aromas. The grapes, meticulously sorted, are pressed before the must is floated with nitrogen in stainless steel tanks, ensuring optimal preservation of flavors.

Alcoholic fermentation, conducted at a controlled temperature of 19°C, allows for the development of delicate and expressive aromas. Finally, aging on lees at low temperature for eight weeks gives this wine a silky texture and remarkable aromatic complexity. With its freshness and elegance, this wine is perfect for moments of sharing.

Le Petit Bouchon Red
This 100% Merlot, vinified without added sulfites, reveals the full richness and intensity of its grape variety. After three weeks of maceration, the grapes develop deep aromas of ripe red fruits, while a rapid alcoholic fermentation, under strict temperature control, ensures an unparalleled purity of aromas.

Aging in stainless steel tanks for four months, with meticulous protection against oxidation, preserves the wine’s freshness and spontaneity. Each vintage produces around 17,000 bottles, showcasing Florian Bouchon’s expertise in capturing the essence of the terroir and offering a wine that is both indulgent and accessible.
